Campfire Potatoes
This is an all-time Falb family favorite we adopted when I was growing up. We used it when we went camping—and when we wished we were camping! There were many times we would start a campfire in our backyard on weekends and sit around it for hours. Often on Sunday nights after church we would invite the youth group over to sit around the campfire with us. Any cool summer night is the right night for a campfire. There are so many good conversations to be had, problems to be solved, songs to be sung, dreams to be born, and strengths to affirm around a fire. So whether you’re preparing dinner to share around a fire or simply roasting marshmallows, don’t miss the opportunity to enjoy the beauty of burning embers and the sweet fellowship that is born around those quiet moments. Your life will be richer for years to come.
4–6 lg. redskin potatoes, thinly sliced (unpeeled)
1 sm. onion, thinly sliced
2 garlic cloves, minced
2 Tbsp. fresh parsley, minced (or 1 Tbsp. dried)
½ tsp. salt
½ tsp. fresh cracked pepper
2–3 Tbsp. salted butter, thinly sliced
½ cup cheddar cheese, shredded
Take an 18-inch piece of foil and arrange potato slices on half of it. Add onions, seasonings, butter, and cheese. Fold up into a pocket so that no heat can escape (potatoes will cook more rapidly). Bake in oven at 350°F for 30–45 minutes or grill for 20–22 minutes, until potatoes are tender. Yields 4 servings.
And Another Thing . . . And Another Thing . . . To add a little flair you can serve with diced green onions, bacon pieces, and sour cream.
